The Eagles earned their spot in the semifinals by defeating Olympic champions Fiji in the quarters, 24-14, then defeated Australia, 22-17, with Danny Barrett getting the winning score to earn a spot in the final.
He says they had a good build-up and strong pre-season.
Russian Federation were dispatched 31-0 in the quarter-finals and the United States - finalists at Glendale - were overwhelmed 22-0 in the semifinals.
However, the U.S. scored two quick tries before Australia hit back under the posts but it was a try in referee time that broke Australia's hearts, finishing the scores at 17-22.
New Zealand then defended for 2 minute 27 seconds after the siren in their own half to move into their 10th Dubai final.
"I know elite teams are measured on results but after the traumas of last 3 months & hardly any preparation I was really proud of the efforts of our boys", Canada coach Damian McGrath said via social media.
Already missing two players after the opening day's pool matches, New Zealand were further decimated by injuries during the knockout phase, losing four more players, but still managed to survive and advance, beating the United States of America 21-5 in the Dubai Sevens final on Saturday (Sunday NZ Time).
Canada now sits second in the World Series Standings behind New Zealand.
The next stop in the Sevens Series takes place in Cape Town, South Africa, next weekend.
New Zealand are in a pool alongside Ireland, Russia and Kenya, while the third and final pool features Canada, France, Spain and Fiji. Muller du Plessis scored a brace and Rosko Specman scored one and provided two tries assists.
A top-four finish in the overall standings this season means automatic qualification for the 2020 Olympics.
Ngarohi McGarvey-Black's late try sealed the win.
